I had procrastinated eating sushi in Tucson in fear of it not meeting my expectations from being spoiled with having sushi in Hawaii. Fear no more! The combination of quality and all-you-can-eat value of IOU Sushi is the best in the desert and on par with the sushi from the Big Island of Hawaii.
I prefer nigiri over hand rolls. The tuna and salmon is high quality and would give up being vegan for them. I highly recommend the albacore and seared tuna nigiri. For hand rolls, try tasting your way around the states with the Alaska, Arizona, and California rolls.
Do yourself a favor and take advantage of all-you-can-eat rather than ordering a la Carte.
I will be back soon and plan to try their speciality rolls (note: plural)! -

Their sushi buffet was alright.. not the best I ever had.. not worth the $25 bucks for sushi buffet. But their service was totally awesome.

I came to IOU Sushi based on the positive Yelp reviews I had read, but I have to say that I was entirely disappointed in my experience here. The service, while friendly overall, was incredibly slow, and the quality of the fish was lacking. My date and I opted for the All You Can Eat option ($26.99 per person for dinner), and were initially impressed by the variety of nigiri and rolls offered. But beyond variety, the taste and smell of the fish was not good. I know that it can take a while to prepare large orders, but we waited at least 30 minutes for our food to arrive, and there weren't very many other parties in the restaurant. Once the food arrived, we immediately noticed that the "unagi sauce" (the eel bbq sauce that comes on lots of rolls and on unagi nigiri) looked like gel and was a very unappetizing color. The sushi itself looked okay, but it only took us eating a few pieces to realize that there was something a little off about the taste. I didn't experience any stomach pain or queasiness from the food, but my date certainly did (not to get too graphic, but he "got sick" later in the evening). We ended up leaving a large portion of our food on the plate because we were worried about eating the fish.
Most of the other reviews I've seen are super positive, so don't let our one-off negative experience dissuade you. Maybe the fish was just a little stale the day we went. But I likely won't give IOU another try when I've had better experiences at other AYCE sushi places (Sushi Ten in particular) where the fish and overall ambience of the restaurant are much more enjoyable. -

I really enjoyed my experience here tonight. The staff was eager to help, for it was my first time visiting. I am new to town and I have found my sushi "home." The menu was diverse, offering options for vegetarians and patrons who prefer cooked rolls. I can't wait for my next visit!

A small to medium-sized restaurant with excellent service and fresh sushi.
The all-you-can-eat option is fantastic. About $20something dollars per person.
The upside down shrimp is popular here. There is a nigiri option or fried option for the upside down shrimp. Both are fantastic with crab meat and sweet.
The nigiri options include salmon, tuna, and many other fish.
